A recent study showed that the
number of plant-based options at universities has doubled since 2013!

Meal reports that the study, conducted by PETA 2,
showed that just a few years ago a vegan student might only have had the option
of a salad, but can now choose from an array of plant-based fare.
The research also found that some schools are promoting the new options
to non-vegan students; for example, Miami University offered an 80 percent vegan
Thanksgiving feast, including vegan mac and cheese, mashed potatoes, and sweet
potato casserole, enjoyed by omnivores and vegan alike.
This shift in demand for meat-free food comes as no surprise. Vegetarian Resource Group reported last year that
42 percent of vegetarians are between the ages of 18 and 34, and 12 percent of
millennials identify as “faithful vegetarians.
